Bread Puddings

Feature Recipes January 2005

(Winter recipes that warm a cold body)
( Williamson recipe that is quick fixing and good eaten)
3 eggs
2 cups whole milk
¼ tsp. Nutmeg
Dash of cinnamon
1 ½ tsp. Vanilla
¼ cup sugar
Dash of salt
2 table spoons Butter, melted
3 thick slices of home made bread
Beat eggs well, add sugar, mix well. Add milk and vanilla. Melt butter and stir the bread cubes into it. Add to milk mixture. Pour into casserole dish. Sprinkle top with nutmeg. Bake 45 minutes at 325 degrees. Do not cover. Can add hand full of raisins to mixture before baking if desired.
Bread Pudding

Heat to scalding 2 cups milk.
Pour over 4 cups coarse breadcrumbs
¼ cup butter melted
½ cup sugar
¼ tsp. Salt
Cool and add 2 eggs slightly beaten
½ cup seeded raisins
1 tsp cinnamon
Pour into buttered 1 ½ quart casserole dish (71/2″)
Bake until silver knife inserted in pudding comes out clean. Serve warm with or without sauce. Bake 350 degrees for 1 hour.

Sauce:
Vanilla, lemon. Or nutmeg sauce
1-cup sugar
2 tbs. Cornstarch
Stir in gradually 2 cups boiling water,
Boil 1minute stirring constantly. Stir in 4 tbs. Butter, 2 tsp. Vanilla or 2 tsp. Lemon juice with 1 tbs. Grated lemon rind or 2 tsp. nutmeg. Keep hot until time to serve.
