Apfel-Nuss Kuchen
(apple nut cake)
by Keith Heim, taken to the ’05 Annual Colony Picnic Dessert Bar)
For cake: 1 pkg. Yellow cake mix 1 cup sour cream ½ cup oil 1 pkg. Vanilla instant pudding 4 eggs For Filling: 2 cups sliced apples (Granny Smith) ¾ cup sugar, divided ½ cup chopped nuts, divided 1 tsp. Cinnamon Combine all cake ingredients and place half in greased bundt (I used 13X9) pan. For filling, mix apples, ½ cup sugar, ¼ cup nuts and cinnamon. Place on top of cake mix in pan. Place remaining batter on top of filling. Sprinkle top with remaining sugar and nuts. Bake at 350 degrees for 45 – 50 minutes until cake pulls away form pan slightly. (I added about 2 tsp. Lemon juice to filling. Used 3 cups of apples and added cinnamon. Apples need to be tart. I tried apple pie filling once, but it wasn’t good. I used twice as many walnuts and skimped a little on sugar. |
