Baked Custard

6 eggs, whisked
2/3 cup sugar
½ tsp. (scant) salt
4 cups hot milk
2 tsp. vanilla

Combine eggs, sugar and salt; slowly add hot milk.  Place in a high 2 ½ quart casserole dish in hot water. Bake at 325 degrees for 40 minutes; or use custard cups and bake 30 minutes.
This is my “comfort food”. The ladies whom I invite to share my dinner enjoy it because they can’t buy it, and it is a nice light dessert – better than ice cream, they say.  I began making this in the 50’s and still do.
