Summer Apple Sauce Cake

Feature Recipe August 2004

submitted by Bob Williamson
I was given an old KMA Radio of Shenandoah, Iowa homemakers cook book. KMA was a station that all listened to in the early days…good weather….news…and homemaking programs. This collection of favorite recipes was a sought after prize yearly after being published and distributed by the radio station. 2004 has been a banner year for gardening and fruit in both rural and city. This summer apple recipe is as delicious today as it was when the applesauce cake was baked in a hot wood stove with no air conditioning. The recipe is written in interesting order in comparison to recipes of today.
A –
2 cups sifted flour
1 cup of sugar
1 – ½ teaspoons of soda
1 – ½ teaspoons of salt
2 tablespoons of coca
½ teaspoon of cinnamon
½ teaspoon of cloves
½ teaspoon of nutmeg
½ teaspoon of all spice
B –
½ cup shortening softened
1 ½ cup unsweetened applesauce
C
– 2 eggs beaten slightly
¾ cup dates chopped
¾ cup raisins
1 cup broken nuts
Sift A and B and heat well. Add C. mix well and pour into a well greased tube pan. Top with more nut meats. Bake at 350 degrees for 1 hour and 15 minutes. Does not require frosting.
